Denis's Carrot Cake

Ingredients :

  • 1½ cups White Flour (all-purpose)
  • 1 cup Sugar
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon ground Cinnamon
  • ½ teaspoon Salt
  • 2/3 cups Corn Oil or Vegetable Oil
  • 2 beaten Eggs
  • 1 cup finely Grated Carrots (about 1-½ Carrots)
  • ½ cup crushed Pineapple (with juice)
  • 1 teaspoon Vanilla Extract
  • ½ cup chopped Walnuts

Preparation :
Grate the Carrots.  Cut Pineapple rings into ¼" cubes, if rings are used.  Sift the Flour, Sugar, Baking Power, Baking Soda, Cinnamon, & Salt into Large mixing bowl.  Add Corn Oil, Eggs, Carrots, Pineapple (with juice), Vanilla & Walnuts.  Mix until moist.  Beat with beaters or medium speed with electric mixer, for 2 minutes.  Pour in to Greased & Lightly Floured 11'' x 7'' x 2'' Glass Baking Pan.
Bake at 350° F for 35 minutes.
Allow to cool in pan for about 10 minutes before removing from pan.  Then allow cake to continue to cool.

Variation :
Frosting with a Cream Cheese Frosting is optional.

Hint from Denis :
Can be served at room temperature.
Can be made in advance & stored in refrigerator for future serving.
